Each and every interaction you perform will be captured as steps (mouse clicks and keyboard actions).
If you wish to add voice over to a particular screen but do not want to click on it, use - Cmd + Shift or Ctrl + Shift and hover over the element to be captured as a step.
You can switch tabs while recording, you will be shown a bar where you can select to record the current tab.
